In this smoothie you get a lot of vitamin A which is important to keep your skin healthy and with an even skin tone. Vitamin A also has a positive effect on irritated skin, sun damaged skin, pigmentation as well as fine lines and wrinkles.

Vitamin A is a fat-soluble vitamin and that is why it is important that it is consumed together with fats so that it can be absorbed by the body. So, do not skip the olive oil in the recipe.

This recipe makes about ½ litre of smoothie.

The fruit and vegetables used can be frozen or fresh.



  • 1 carrot – preferably lightly steamed*
  • ½ tomato – preferably lightly steamed*
  • 1/3 of a courgette
  • 1 banana
  • 1 dl mango
  • Juice of 1 orange
  • 1 cm ginger, chopped into small pieces
  • 2 tablespoons of pumpkin seeds
  • 3 dl water, coconut oil or cold herbal tea**
  • 1 teaspoon linseed oil
  • 2 teaspoons olive oil

If you like spicy ingredients add anti-inflammatory chili or cayenne pepper.

Add lemon juice for a fresh, slightly sour flavour.

Preparation

/ Put all of the ingredients in the blender except for the oil. Blend until the smoothie is creamy with no lumps.

/ Add the linseed and olive oil and blend for another 10 seconds until the smoothie is ready to drink.

Other good foods with a high content of vitamin A

Apricots, plums, broccoli, peaches, pumpkins, kale, cabbage, melon, pears, spinach, sprouts, sweet potatoes, cranberries, peas.

*Steam the carrots and tomatoes before use. Bake them for a while in the oven when you have it turned on anyhow or boil a bit of water and place a sieve with the vegetables above the pot and let it steam for about 10 minutes. Let the vegetables cool off before use. Prepare large portions at a time and freeze them so you have enough for several days.

** Make a pot of tea in the evening before going to bed. Let it cool overnight so it will be ready to add to your smoothie in the morning. Get more tips for making smoothies here.
